Ingredients
- 3 cups of freshly grated carrots
- 4 and ½ cups of water
- 2 cups of old fashioned oats
- 6 tablespoons of raisins
- 1 teaspoon ground ginger
- ½ teaspoon of ground nutmeg
- 2 tablespoons of pure vanilla extract
- 6 tablespoons of chopped toasted walnuts
Instructions:
- Place grated carrots and water into a pot and simmer covered for 10 minutes. Add the remaining ingredients (except the walnuts) and cook for another 5 minutes until the oats are tender.
- Serve topped with toasted walnuts and enjoy!
